Oatmeal Butterscotch Cookies
 

  1. Transfer the cookies from the freezer to the fridge the night before baking. Alternately, the cookies can be thawed on the counter, but they need to be baked when they are chilled, not at room temperature. If the dough seems too warm, then place it back in the refrigerator for approximately 15 minutes until lightly chilled.

  2. Preheat your oven to 350°F with the rack placed in the middle position.

  3. Once the oven has come to temperature, place the cookies on a non-stick baking sheet, or line the baking sheet with either parchment paper or a silicone baking sheet. The cookie dough balls should be approximately 3” apart.

  4. Bake for 8-9 minutes. Depending on the age and the dependability of your oven, you may want to rotate the tray 180° in case there are hotspots. Cookies should be lightly browned around the edges and underneath. If the cookies haven't browned sufficiently, then place the baking sheet back in the oven and check every minute.

  5. Once baking is completed, leave the cookies on the tray outside of the oven for an additional 10 minutes and then transfer to a wired cookie rack for further cooling.
